BROCCOLI & ALMONDS SOUP

Hello all,

Today I am presenting a very healthy and oil free soup ,using mainly the leftover broccoli stems,which we generally throw away..Hope you all like it :)



Ingredients -

Broccoli stems- 2 cups ,cut into small pieces

Broccoli florets -1/2 cup ,cut into small pieces 

Almonds - 10 ,soaked for about 2 hours and peeled 

Onion - 1 medium ,chopped 

Garlic -6 pods peeled and chopped 

Milk -1 Cup 

Cornflour - 1 teaspoon 

All purpose seasoning - 1 teaspoon

Oregano -1 teaspoon

Pepper powder -1/2  teaspoon

Salt -1 teaspoon or ,according to taste 

Water -1/2 cup 

Preparation -

Heat a non stick pan on medium heat ,and put in chopped onions and garlic in it.Saute for one minute on medium heat.Now add the chopped broccoli stem pieces and florets ,add salt to it ,and saute for few more minutes.Add half cup water to it ,cover and cook for 5 minutes.Then remove from heat and let it cool.After cooling ,put this mix along with peeled amonds, in a mixer and grind to a smooth paste.




Now heat the pan again.Pour this mixture into the pan ,and add a cup of milk to it.
I would recommend adding a teaspoon of dissolved cornflour to the milk ,to prevent it from curdling.Now boil this mix ,stirring continuously ,for 5 minutes.Then add all purpose seasoning,oregano & pepper powder to it.
Remove from heat and serve hot ,with soup sticks .
